Beef Shoulder Tender Grilling Tips
The beef shoulder tender is a convenient and versatile cut that is tender and full of flavor. It offers a new option for grilling. It has a unique shape and is very lean. For best results follow the tips listed below.
Do not overcook
Remove beef shoulder tenders from heat when they reach an internal temperature of 130º to 140ºF if you are going to hold them before serving as they will continue to cook; if serving off the grill and immediately eating; cook to 140º F.
Using a meat thermometer is the best way to check the temperature. Beef shoulder tenders do not cook like traditional beefsteaks. At an internal temperature of 130º F to 140º F they will not feel firm and when pierced with the thermometer, red juice may appear.
Trust the thermometer - they are done.
Use tongs to turn the beef shoulder tender
Beef shoulder tenders should be grilled whole
The beef shoulder tender will need to be turned or “rolled” several times to ensure even cooking.
Do not use a fork to turn – piercing will cause juice to escape.
Length of cooking time varies according to size of the beef shoulder tenders.
Expect to see weight ranges between 6 oz. to 12 oz. in individual pieces
Smaller pieces will cook faster
Larger, thicker pieces will need more cooking time
